QUICK + EASY ENTERTAINING TIPS

cajun shrimp burger

This is a pretty quick and easy way to enjoy some Cajun flavors in a shrimp burger. Adjust the amount of cayenne pepper and hot sauce you use if you like it really spicy.

6 ounces large shrimp (about 1/3 pound), peeled and deveined
3 tablespoons vegetable or canola oil, divided
1 tablespoon finely minced onion
1 tablespoon finely minced celery
1 tablespoon finely minced green pepper
Salt, to taste
Freshly ground black pepper
1 small clove garlic, finely minced
1/8 teaspoon cayenne pepper
1/4 teaspoon paprika
1/2 teaspoon Dijon mustard
Dash hot sauce, or to taste
1/4 cup plus 2 tablespoons panko breadcrumbs
1 egg, beaten

Cajun Mayonnaise
1/2 teaspoon Dijon mustard
2 tablespoons mayonnaise
1/8-1/4 teaspoon cayenne pepper, or to taste
1/4 teaspoon Worcestershire sauce
Salt, to taste
Freshly ground black pepper

Sourdough hamburger roll, split

1. Dice shrimp into a mixture of both coarse and fine pieces. Place in a medium bowl and set aside.
2. In a small sauté pan, heat 1 tablespoon oil over medium heat. Add onion, celery and green pepper and cook for about 4 minutes, until softened. Season with salt and pepper. Add garlic, cayenne and paprika and cook for another 1-2 minutes. Remove from heat and let cool for 10 minutes.
3. Add cooled vegetable mixture to shrimp, along with mustard, hot sauce and 2 tablespoons breadcrumbs. Add enough egg to bind mixture together, about 1/2 of egg (add more breadcrumbs if mixture is too wet). Discard extra egg or save for later use. Gently stir to combine. With wet hands, mold into burger, cover and refrigerate for 15 minutes.
4. In a small bowl, combine mayonnaise ingredients and set aside. Adjust seasonings as necessary.
5. In a small sauté pan, heat remaining 2 tablespoons oil over medium-high heat. Place remaining 1/4 cup breadcrumbs on a plate and coat both sides of shrimp burger. Cook burger for 3-4 minutes per side, until golden brown and cooked through. Spread cajun mayonnaise on both sides of roll, top with shrimp burger and serve.

Serves 1.
