QUICK + EASY ENTERTAINING TIPS

baked sole

A simple, very easy recipe for baked fish. If you can’t find sole, you can substitute with cod or haddock.

6 ounces fresh sole
2 teaspoons canola oil
1 small clove garlic, finely minced
Zest from 1/2 lemon
1 tablespoon finely chopped fresh flat-leaf Italian parsley
2 tablespoons plain (or Italian-style) breadcrumbs
Salt, to taste
Freshly ground black pepper
Juice from 1/2 lemon

1. Preheat oven to 350°F. Brush both sides of fish with oil and place in a baking pan.
2. In a small bowl, combine garlic, lemon zest and parsley. Stir in breadcrumbs. Top fish with breadcrumb mixture and gently pat down on fish. Season with salt and pepper. Drizzle top of mixture with lemon juice and bake for 10-12 minutes, until fish is cooked through and top is golden brown. Serve warm.

Serves 1.
