QUICK + EASY ENTERTAINING TIPS

baked scrod with chive-sour cream sauce

This is a simple, yet elegant way to enjoy fresh fish. I love it served with a small dollop of the sour cream and some fresh micro greens on top for color. It’s perfect served with a side of roasted potatoes as well.

6 ounces fresh scrod
2 teaspoons canola oil
Salt, to taste
Freshly ground black pepper

Chive-Sour Cream Sauce
2 tablespoons sour cream
1-2 tablespoons fresh lemon juice
Salt, to taste
Freshly ground black pepper
1 teaspoon finely minced fresh chives

Micro greens, for garnish, optional

1. Preheat oven to 350°F. Brush both sides of fish with canola oil and place fish in a baking pan. Season fish with salt and pepper and bake for 10-12 minutes, until fish is firm and cooked through.
2. Meanwhile, in a small bowl, combine ingredients for sauce. Add more lemon juice is sauce is too thick. Remove fish from oven and transfer to a serving plate. Top fish with sauce and micro greens (if using). Drizzle with additional lemon juice and serve.

Serves 1.
