I think in many ways, cauliflower is a very unappreciated vegetable. It’s not the prettiest guy on the block, or the most flavorful, but it does offer curious folks like myself a blank canvas for dressing it up. And because it’s low in saturated fat and cholesterol and high in vitamin C, it makes it an ideal vegetable to incorporate into your diet. I bought one head of it and came up with three great ways to enjoy it:

Seared Scallops with Cauliflower Purée
Roasted Cauliflower with Parmesan
Whole-Wheat Spaghetti with Roasted Cauliflower

Even if you think you don’t like cauliflower, give these recipes a try. You may be surprised at how good it can taste!
