QUICK + EASY ENTERTAINING TIPS

potato cakes

This is a good way to use up leftover mashed potatoes.

Half recipe creamy mashed potatoes
1 1/2 tablespoons flour
Salt, to taste
Freshly ground black pepper
1 egg, beaten
1 1/2 tablespoons breadcrumbs
1-2 tablespoons extra virgin olive oil

1. Remove cooled mashed potatoes from refrigerator and shape into 2 round disks.
2. In a shallow dish, add flour and season with salt and pepper.
3. In another shallow bowl, add egg.
4. In a shallow dish, add breadcrumbs.
5. In a medium non-stick sauté pan, heat oil over medium-high heat. Dredge each potato cake in flour mixture, coating both sides. Gently shake off excess. Dredge in egg, lightly coating both sides, followed by breadcrumbs. Add to pan and give pan a quick shake, making sure cakes aren’t sticking to pan. Allow to cook, untouched, for about 5 minutes, until a crust has formed on bottom. Turn and finish cooking for another 4-5 minutes, until potato cakes are cooked through and lightly golden brown. Serve warm.

Serves 1.
