Gourmet Recipes for One is a resource of simple, delicious recipes that focus on cooking for one. Single-serving recipes are featured as well as ideas and inspiration for achieving a well-balanced lifestyle.


I recommend making the full recipe and saving one serving for the next day. It’s a rich dessert, and a little goes a long way. Plus, two servings uses exactly half of a ladyfingers package. For quick espresso, order three shots from your favorite coffeehouse.

This recipe is part of the italian-inspired menu.

2 egg yolks, at room temperature
1 tablespoon plus 1 teaspoon sugar
1 tablespoon plus 1 teaspoon dark rum, divided
1/2 cup plus 1 tablespoon brewed espresso, at room temperature, divided
8 ounces mascarpone cheese
1/2 cup heavy cream
10 Italian ladyfingers, (1/2 of a 3 1/2 ounce box)
Bittersweet chocolate, shaved, for garnish

1. Whisk egg yolks and sugar in an electric mixer fitted with whisk attachment on high speed for 3-5 minutes, until light yellow. Lower speed to medium and add 1 teaspoon rum, 1 tablespoon espresso and mascarpone cheese. Whisk until smooth.
2. In a medium mixing bowl, whisk heavy cream by hand (or with an electric mixer) until thick. Gently fold into mascarpone mixture.
3. In a shallow dish, combine remaining 1 tablespoon rum and 1/2 cup espresso. Break each ladyfinger in half and separate into two equal piles. One at a time, dip both sides of each ladyfinger from one pile in the espresso rum mixture. Place 5 dipped ladyfinger halves in one glass and 5 in another. Top with 1/4 of cream mixture over each. Repeat procedure starting with dipped ladyfingers and finishing with cream mixture. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight.
4. Top with chocolate shavings just before serving.

Serves 2.
