sparkling cranberries

This recipe was created by Heidi Swanson of www.101cookbooks.com and it’s an absolutely beautiful addition to any holiday table. For the coatings, I used a raw organic cane sugar for both which worked really well (you just don’t want to use a huge grain, something larger than standard sugar, but smaller than most turbinado sugars works best). If your hands or the sugar gets clumpy at all, wash your hands and start with new sugar.

2 cups fresh cranberries, picked over
2 cups water
2 cups granulated sugar
2 cups raw organic cane sugar, for dusting

1. Place cranberries in a medium glass bowl and set aside.
2. Make simple syrup. In a medium saucepan, bring water and granulated sugar to a simmer. Allow syrup to cool slightly; then pour over cranberries (if syrup is too hot it will burst cranberries, so be careful). Cover and refrigerate overnight.
3. Drain cranberries and toss with raw organic cane sugar until well coated (work in small batches, so sugar doesn’t get too damp or clump). Place coated cranberries on a baking sheet to dry for a few hours.
4. Do a second toss with more raw organic cane sugar (this usually takes care of any sticky spots on cranberries). Allow to dry for another hour.

Makes 2 cups.
