mexican chocolate pudding

The deep, rich flavor of the Mexican chocolate is delicious when combined with a little bit of cinnamon; the two flavors really work so well together. Mexican chocolate has an almost grainy texture to it which makes this pudding really warm and earthy. If you can’t find mexican chocolate at your local market, you can order it online at www.tazachocolate.com.

1/4 cup plus 1 tablespoon milk
2 cinnamon sticks
2 tablespoons sugar
1/2 tablespoon cornstarch
1/2 tablespoon cocoa powder
Pinch of salt
1/4 cup plus 1 tablespoon heavy cream
1/4 teaspoon vanilla extract
2 ounces Mexican chocolate, finely chopped
1/2 tablespoon unsalted butter

1. In a small saucepan, bring milk and cinnamon sticks to boil over medium-high heat. Remove from heat and allow cinnamon to steep in milk while it cools, about 30 minutes.
2. Whisk together sugar, cornstarch, cocoa and salt in a medium saucepan.
3. Remove cinnamon sticks from cooled milk and discard. Add heavy cream and vanilla and stir to combine. Whisk into dry mixture, until dissolved and well combined.
4. Place saucepan over medium heat. Cook, whisking constantly, until mixture thickens, about 10-15 minutes. Whisk in chocolate, until melted, 1-2 minutes. Remove from heat and whisk in butter until completely melted.
5. Working quickly, ladle pudding into serving dish and cover tightly with plastic wrap, placing it directly on surface of pudding to prevent any air from getting to it. Refrigerate until set, at least 1 hour.

Serves 1.
