QUICK + EASY ENTERTAINING TIPS

individual blueberry cobbler

This is a perfect, single serving dessert that can be made with just about any fruit you like. Try it with blackberries, raspberries or peaches, whatever is fresh in season.

1 tablespoon sugar
1/8 teaspoon cornstarch
3/4 – 1 cup fresh blueberries, rinsed
1/2 teaspoon lemon juice
2 tablespoons flour
1 1/2 tablespoons old-fashioned oats
1 tablespoon brown sugar
1/8 teaspoon cinnamon
Pinch of salt
1 tablespoon unsalted butter

1. Preheat oven to 375°F.
2. In a medium bowl, combine sugar and cornstarch. Add blueberries and lemon juice and toss together.
3. Place a 4-ounce ramekin on a baking sheet and fill with fruit mixture. In another bowl, combine flour, oats, brown sugar, cinnamon and salt. Cut in butter until coarse crumbs form.
4. Spoon topping over fruit mixture and bake for 30-35 minutes, until browned and bubbly. Serve warm.

Serves 1.
