QUICK + EASY ENTERTAINING TIPS

individual apple crisp

When the season changes to fall in New England, it’s all I can do to eat as many apples as possible, in every way possible. And for dessert, this is my go to favorite recipe. It’s warm and gooey and topped with some good vanilla ice cream, well, there isn’t much that’s better than that.

1 tablespoon unsalted butter, plus extra for greasing
1 apple, peeled, cored and diced
1 tablespoon sugar
1 teaspoon lemon juice
1/8 teaspoon lemon zest
1/8 teaspoon cinnamon
1/8 teaspoon nutmeg
2 tablespoons flour
1 1/2 tablespoons old-fashioned oats
1 tablespoon brown sugar
1/8 teaspoon cinnamon
Pinch of salt

Vanilla ice cream, for serving

1. Preheat oven to 375°F. Grease a 4-ounce ramekin with butter and place on a baking sheet.
2. In a medium bowl, combine apple, sugar, lemon juice and zest, cinnamon and nutmeg. Stir until mixture is well combined. Place in bottom of ramekin.
3. In another bowl, combine flour, oats, brown sugar, cinnamon and salt. Cut in remaining 1 tablespoon butter until coarse crumbs form.
4. Spoon topping over apple mixture and bake for 35-40 minutes, until browned and bubbly. Serve warm with vanilla ice cream.

Serves 1.
