deconstructed key lime pie

Sometimes you want a piece of pie but don’t want to make an entire pie for just one slice, which is why this recipe is a perfect solution. This has all of the same flavors of a great key lime pie without the temptation of leftovers. It’s worth it to use real, fresh key limes here and good lime curd, both of which are now pretty easy to find at many grocery stores.

1/4 cup graham cracker crumbs
1 tablespoon unsalted butter, melted
3 tablespoons lime curd
3 tablespoons fresh key lime juice
1/4 cup heavy whipping cream
1 tablespoon sugar
Zest from 1/2 key lime, optional

1. Preheat oven to 350°F.
2. In a medium bowl, toss graham cracker crumbs with melted butter and spread out on a baking sheet. Bake for about 5 minutes, until just toasted. Remove and set aside.
3. In another medium bowl, combine lime curd and key lime juice and whisk together. Set aside.
4. Using an electric mixer, beat cream and sugar together until medium peaks form.
5. Place half of graham cracker crumbs in the bottom of a serving glass. Top with half of lime curd mixture, followed by half of whipped cream. Repeat, finishing with whipping cream. Garnish with key lime zest (if using). Chill for 1-2 hours, or longer, until ready to serve.

Serves 1.
