strawberry shortcake cookies

strawberry shortcake cookies | photo by: Cassandra BiroccoThis recipe was adapted from a Martha Stewart recipe and are a nice, much more portable version of a classic summer dessert and are perfect for picnics. These cookies are best served the same day.

2 cups hulled, diced strawberries
1 teaspoon fresh lemon juice
1/2 cup plus 2 tablespoons sugar
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
6 tablespoons cold unsalted butter, cut into small pieces
2/3 cup heavy cream
Sanding sugar, for sprinkling, optional*

1. Preheat oven to 375°F. Line a baking sheet with parchment paper and set aside.
2. In a medium bowl, combine strawberries, lemon juice, and 2 tablespoons sugar.
3. Whisk together flour, baking powder, salt, and remaining 1/2 cup sugar in a medium bowl. Cut in butter with a pastry cutter, or a fork, until mixture resembles coarse crumbs. Stir in cream until dough starts to come together. Gently stir in strawberries.
4. Using a 2-inch ice cream scoop (dough is a bit shaggy so this helps to hold its shape), pack down dough into scoop. Drop cookie dough on prepared baking sheet and flatten cookies slightly. Dust with sugar (if using). Bake for 18-20 minutes, until lightly golden brown. Transfer to a wire rack and allow to cool.

*Sanding sugar can be found at many Whole Foods or gourmet markets.

Makes approximately 16 cookies.
