These truffles are great for holiday gift giving (or to make for Valentine’s Day). Inside of these sweet little truffles is a perfect combination of moist red velvet cake laced with cream cheese. The result is a fiery red filling that’s perfect for rolling in white chocolate.
1 box packaged red velvet cake mix
8 ounces cream cheese, softened
1 teaspoon vanilla extract
20 ounces white chocolate (1 ounce per truffle)
1. Make cake according to box instructions and allow to cool completely.
2. Cut up cake into small pieces and place in a food processor and blend until small crumbs form. Add cream cheese and blend until smooth, like a dough. Form into individual truffles and place on a baking sheet lined with wax paper. Cover with plastic wrap and place in freezer for 10-15 minutes.
3. Meanwhile, melt white chocolate over a double boiler. Dip each truffle, one at a time, in white chocolate, and cover completely. Place truffles back on wax paper. Refrigerate for at least 1 hour, or until firm.
