I love to make Christmas cookies as gifts every year and this is one of my favorite recipes to use.
3 cups flour
1 1/2 teaspoons ground ginger
1 1/2 teaspoons cinnamon
1/2 teaspoon cloves
1/2 teaspoon baking soda
1/2 teaspoons salt
1/4 teaspoon baking powder
1 stick unsalted butter, at room temperature
1/2 cup light brown sugar
1/2 cup molasses
1. In a large bowl, combine flour, ginger, cinnamon, cloves, baking soda, baking powder and salt. Set aside.
2. Using an electric mixer fitted with paddle attachment, cream together butter and sugar until light and fluffy. Add egg and molasses and mix until combined. Slowly add flour mixture, a little at a time until incorporated. Wrap dough in plastic wrap and refrigerate for about 1 hour.
3. Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
4. On a lightly-floured surface, roll dough until about 1/4-inch thick. Cut out with lightly floured cookie cutters and place cookies on prepared baking sheet. Refrigerate for about 10 minutes. Bake for about 10 minutes, until just lightly browned. Transfer cookies to a cooling rack and allow to cool completely.
