My mother used to make these cookies all the time when I was a kid. They are really soft and chewy, not crisp like some ginger cookie recipes, but they’re really full of great ginger flavor and perfect for the holidays.
Cooking spray, for greasing
6 tablespoons unsalted butter, softened
1 cup sugar
1 egg, beaten
1/4 cup molasses
1 3/4 cups plus 2 tablespoons flour
1 1/2 teaspoons ginger
1/2 teaspoon baking soda
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1. Preheat oven to 325°F. Coat a baking sheet with cooking spray and set aside.
2. Using a standing mixer or by hand, cream butter and sugar together until light and fluffy. Add egg and molasses and mix well.
3. In a medium bowl, combine flour, ginger, baking soda, cinnamon and nutmeg. Add to butter mixture, a little at a time, and mix until combined.
4. Using a tablespoon, place dough about 1-inch apart on prepared baking sheet and flatten slightly. Bake for about 10-12 minutes, until just set. Transfer to a wire rack and allow to cool.
