1 cup old-fashioned oats
1/2 cup flour
1/2 cup whole-wheat flour
1 tablespoon wheat germ, optional
1 teaspoon baking soda
1/4 teaspoon cinnamon
1/4 teaspoon salt
6 tablespoons unsalted butter, at room temperature
3/4 cup packed light brown sugar
1 egg, at room temperature
1/4 teaspoon vanilla extract
1 ripe banana, roughly mashed
1/4 cup chocolate chips
1. Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
2. In a medium bowl, combine oats, flours, wheat germ (if using), baking soda, cinnamon and salt.
3. In a stand mixer fitted with paddle attachment, combine butter and sugar until light and fluffy. Add egg and vanilla and mix to combine. Add banana and mix until incorporated. Slowly add in flour mixture and mix until fully combined. Stir in chips.
4. Using a 2-inch ice cream scoop, drop cookies onto prepared baking sheet and bake for 10-12 minutes, until lightly golden brown. Transfer to a wire rack and allow to cool.
