honey-chipotle grilled chicken

You can find chipotle chiles in many gourmet markets. The small cans come in two varieties: chipotle chiles in adobo sauce and chipotle salsa. Most of the heat is in the actual chiles in the adobo sauce version so be sure to adjust the amount of chiles you use based on how spicy you want it to be. The salsa version is a totally puréed version, and has a more smoky flavor. I prefer the salsa version here but either can be used in this recipe. This grilled chicken has a nice balance of smoky and sweet. It’s great on its own or served with mango salsa or homemade blue cheese sauce.

1 bone-in breast of chicken, with skin on
1 tablespoon extra virgin olive oil
Salt, to taste
Freshly ground black pepper
2 tablespoons honey
2 tablespoons chipotle salsa (or chipotle chiles in adobo)

1. Preheat grill or grill pan to medium heat.
2. Brush chicken breast with oil and season with salt and pepper.
3. In a small bowl, combine honey and chipotle until smooth. Adjust flavor of sauce depending on how sweet you want it to be.
4. Place chicken on grill, skin-side down and grill until a nice char forms, about 5 minutes. Turn chicken and baste skin side with sauce. Cook for 15-20 minutes, turning and basting chicken, about every 5 minutes. Grill until golden brown and cooked through.
5. Transfer to a cutting board, tent with aluminum foil and allow chicken to rest for 5-10 minutes. Serve warm, or let cool before refrigerating.
