QUICK + EASY ENTERTAINING TIPS

grilled citrus chicken

The combination of citrus flavors really brightens up the chicken and adds a really fresh flavor to it which is why I like to double the recipe when I make it. You can easily make half of this recipe, serving one, but the extra chicken is nice to have on hand for later in the week.

1 tablespoon canola oil
Zest and juice of 1 lemon
Zest and juice of 1 lime
Zest and juice of 1 l orange
2-3 fresh thyme sprigs, finely minced
2 bone-in breast of chicken, with skin on
Salt, to taste
Freshly ground black pepper

1. In a small bowl, combine oil, zest and juices from lemon, lime and orange and thyme. Season chicken breasts with salt and pepper and place in a large plastic zip-lock bag. Pour in citrus marinade, coating chicken all over. Seal bag and place in a baking pan. Refrigerate for about 8 hours, turning chicken occasionally for even coating. Return chicken to room temperature before grilling.
2. Preheat grill or grill pan to medium heat. Remove chicken from marinade and grill for 20-25 minutes, until golden brown and cooked through. Transfer to a cutting board, tent with aluminum foil and let chicken rest for 5-10 minutes. Serve warm, or allow to cool to room temperature before refrigerating.

Serves 2.
