QUICK + EASY ENTERTAINING TIPS

chicken with creamy rosemary sauce

A simple pan-seared chicken dish that is a good, basic recipe to know. Once you have the technique down, you can add in any flavors to the sauce that you like: fresh thyme or parsley or even a little Dijon mustard all work really well. For a slightly healthier version, omit the cream and use only stock. I like to serve this with some rice to soak up all that great sauce.

1 tablespoon extra virgin olive oil
1 boneless breast of chicken
Salt, to taste
Freshly ground black pepper
1 tablespoon white wine
3 tablespoons low-sodium chicken stock
3 tablespoons heavy cream
1 teaspoon fresh rosemary, finely chopped

In a medium sauté pan, heat oil over medium heat. Season each side of chicken breast with salt and pepper. Cook chicken for 7-10 minutes until golden brown on both sides. Add wine to deglaze pan, scraping up any browned bits on bottom of pan. Add stock and cream and cook for about 5 minutes, until sauce is thickened. Add rosemary and cook for another 1-2 minutes. Remove from heat and serve warm.

Serves 1.
