QUICK + EASY ENTERTAINING TIPS

strawberry butter

When they’re fresh and in season, my favorite way to eat strawberries is straight from the container. But I also love to use them in just about every way I can. This simple compound butter is great over a pile of pancakes or on a waffle, or even simply spread on a piece of good toasted bread for a quick snack. You may need to adjust the amount of sugar you use based on how sweet the strawberries are.

2 tablespoons diced fresh strawberries
1 stick unsalted butter, softened
1-2 teaspoons sugar

In a food processor, purée strawberries, butter and sugar until smooth. Place butter on a sheet of plastic wrap and gently roll into a small log, or place in a serving bowl. Wrap and refrigerate until ready to use.

Makes 1/2 cup.
