QUICK + EASY ENTERTAINING TIPS

pineapple batido

A batido is a traditional Latin American blended drink made with fresh fruit, milk and ice and this is one of absolute favorite drinks for breakfast. I like to blend it until it’s really light and frothy. If desired, yogurt can be substituted for the milk for a thicker consistency.

1 cup fresh pineapple, cut into chunks
1 cup ice
1/2 cup low-fat milk
1 teaspoon sugar, honey or agave nectar, optional

In a blender, chop ice. Add pineapple, milk and sweetener (if using) and purée until smooth. Serve immediately.

Serves 1.
