Every time I make this dish it reminds me of my brother, who loves eggs. When we were kids, he would put just about anything on his, including ketchup, which still to the day grosses me out. But this roasted tomatillo sauce is a whole other story. It’s perfect with eggs and might just spoil you too, if you’re also someone who likes ketchup on your eggs.
1/2 tablespoon unsalted butter
2 eggs, beaten
Salt, to taste
Freshly ground black pepper
4 tablespoons roasted tomatillo salsa, divided
1 Hass avocado
Sour cream, for serving
Fresh cilantro, for serving
Juice from 1/2 lime
1. In a medium sauté pan, heat butter over medium heat. Add eggs and cook until almost scrambled. Season with salt and pepper. Add 2 tablespoons roasted tomatillo salsa and stir into eggs. Allow to heat through until eggs are fully cooked.
2. Meanwhile, in another medium sauté pan, warm tortilla over low heat for 1-2 minutes per side (or do this in a microwave).
3. Cut avocado in half, remove and discard pit. Dice one half (save remaining half for another use) and set aside.
4. Place egg mixture down center of warmed tortilla and gently roll up, placing seam-side down on a serving plate. Top with additional 2 tablespoons roasted tomatillo salsa, diced avocado, a dollop of sour cream and fresh cilantro. Drizzle with lime juice and serve warm.
