QUICK + EASY ENTERTAINING TIPS

homemade granola

Making your own homemade granola is much easier than you think it might be. This is my basic recipe for it, but you can substitute with any of your favorite dried fruits, seeds or nuts to the recipe. For a heartier breakfast, serve this with vanilla bean yogurt.

2 tablespoons unsalted butter
2 cups old fashioned oats
1/4 cup whole almonds, roughly chopped
1 tablespoon flax seeds
1/4 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup plus 1 tablespoon honey
1/4 cup dried cranberries
1/4 cup raisins

1. Preheat oven to 300°F.
2. In a medium bowl combine oats, almonds, flax seeds, cinnamon and salt.
3. In a small saucepan, heat butter and honey over medium heat and cook just until butter has melted. Pour over oat mixture and toss it all together to coat well. Spread granola evenly onto a baking sheet and bake for 20-25 minutes, until mixture is golden brown. Check mixture halfway through baking time and toss if necessary. When granola is completely cooled, stir in cranberries and raisins. Store in an airtight container for up to 1 week.

Makes 2 3/4 cups.
