This dish is very similar to spaghetti carbonara but it’s made with a fried egg instead. I cut the bacon into thin slices to mimic the strands of pasta but you can chop it if you prefer.

2 ounces spaghetti
2 tablespoons extra virgin olive oil, divided, plus extra for drizzling
1-2 pieces thick-cut bacon, thinly sliced
1/2 shallot, thinly sliced
Salt, to taste
Freshly ground black pepper
1 tablespoon unsalted butter
1 egg

1. Bring a pot of water to boil and add salt. Add pasta and cook for 7-10 minutes, until al dente. When pasta is done, drain and transfer to a serving bowl. Toss with 1 tablespoon olive oil and set aside.
2. Meanwhile, in a medium sauté pan, cook bacon until nicely browned, about 5 minutes. Remove with a slotted spoon and transfer to a paper towel-lined plate. Discard grease from pan and carefully wipe clean.
3. Heat 1 tablespoon olive oil over medium heat. Add shallot and cook until lightly golden brown, 4-5 minutes. Season with salt and pepper. Remove and transfer to plate with bacon. Wipe out pan again and melt butter. Add egg and fry until just cooked, turning once, making sure to leave egg a little running.
4. Add bacon and shallots to pasta and toss to combine. Transfer to a serving bowl and top with fried egg. Season with salt and pepper, drizzle with additional olive oil and serve.

Serves 1.
