turkey burger with chipotle ketchup

You can find chipotle chiles in many gourmet markets. The small cans come in two varieties: chipotle chiles in adobo sauce and chipotle salsa. Most of the heat is in the actual chiles in the adobo sauce version so be sure to adjust the amount of chiles you use based on how spicy you want it to be. The salsa version is a totally puréed version, and has a more smoky flavor. I prefer the salsa version here but either can be used in this recipe. Brushing the burger with vegetable oil before grilling not only helps prevent it from sticking but also makes a nice crust. This burger pairs really well with baked sweet potato fries.

1/2 pound ground turkey
1 tablespoon breadcrumbs
1/2 teaspoon ground cumin
Salt, to taste
Freshly ground black pepper
Vegetable oil

Chipotle Ketchup
1-2 tablespoons chipotle salsa (or chipotle chiles in adobo)
1-2 tablespoons ketchup
Salt, to taste
Freshly ground black pepper

2 ounces extra sharp cheddar cheese
Hamburger roll, split

1. Preheat grill or grill pan to medium heat.
2. In a medium bowl, combine ground turkey, breadcrumbs, cumin, salt and pepper. Wet hands and form into burger. Add more breadcrumbs if burger is too moist to bind together. Brush both sides of burger with vegetable oil and grill for 5-8 minutes on one side. Flip and cook for another 2-3 minutes, until desired doneness.
3. Meanwhile, in a small bowl combine ingredients for chipotle ketchup. Adjust level of heat as desired (add more chipotle if you want it spicier). Set aside.
4. When burger is almost done, top with cheese and cook until cheese has melted. At the same time, grill hamburger bun to light golden brown. Serve burger with chipotle ketchup and serve.

Serves 1.
