QUICK + EASY ENTERTAINING TIPS

raisin bran muffins

One of my favorite cereals as a kid was raisin bran which I think is why I like these muffins so much. They use a few different ingredients but the recipe makes two muffins, so you’ll have another one ready to go for the next day. The applesauce helps to keep them a bit lighter and the cinnamon and vanilla really give them a lot of good flavor.

Cooking spray, for greasing

1/4 cup plus 1 tablespoon wheat bran
1/4 cup oats
1/4 cup flour
1/4 cup whole-wheat flour
2 teaspoons wheat germ
3/4 teaspoon baking soda
Pinch of salt
1/2 cup buttermilk
2 tablespoons applesauce
2 1/2 tablespoons honey
1 egg, beaten
1 tablespoon canola oil
1/2 teaspoon vanilla extract
1/4 teaspoon cinnamon
1/4 cup raisins

1. Preheat oven to 350°F. Lightly spray 2 muffin cups of a muffin tin with cooking spray and set aside.
2. In a medium bowl, combine bran, oats, flours, wheat germ, baking soda and salt.
3. In another medium bowl, whisk buttermilk, applesauce, honey, 1/2 egg (discard extra egg or save for later use), canola oil, vanilla and cinnamon until frothy, about 5 minutes. Pour into flour mixture and mix until well combined. Stir in raisins. Divide mixture equally into prepared muffin cups. Bake for 20-25 minutes until a toothpick comes out clean from center of muffins. Allow to cool slightly.

Makes 2 muffins.
