QUICK + EASY ENTERTAINING TIPS

pumpkin bread

This recipe makes 1 large loaf when using a 6 3/4 x 4 1/4 x 2 3/4-inch loaf pan or 2 loaves if using standard disposable aluminum pans.

Cooking spray, for greasing
3/4 cup sugar
1/4 cup vegetable oil
1 egg, beaten
3/4 cup plus 1 tablespoon flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon nutmeg
1/8 teaspoon cinnamon
1/2 15-ounce can pumpkin

1. Preheat oven to 350°F. Spray loaf pan with cooking spray and set aside.
2. In a medium bowl, combine sugar, vegetable oil and egg and mix until light and fluffy. Set aside.
3. In another bowl, whisk together flour, baking powder, baking soda, salt, nutmeg and cinnamon. Slowly add dry ingredients to sugar mixture, a little at a time, stirring after each addition. Add pumpkin and stir until blended.
4. Pour batter into prepared loaf pan(s) and bake for about 45-50 minutes, or until a toothpick comes out clean. Allow to cool before serving.

Makes 1 large loaf (or 2 small).
