QUICK + EASY ENTERTAINING TIPS

pear and goat cheese sandwich

I like to experiment with different kinds of pestos and this one, made from walnuts, is really good on sandwiches like this or served over pasta as well.

2 slices multi-grain bread
1-2 tablespoons walnut pesto
Salt, to taste
Freshly ground black pepper
2 ounces goat cheese, softened
1 tablespoon honey
1/2 pear, thinly sliced

Spread one slice of bread with walnut pesto and season with salt and pepper. Spread other slice with goat cheese, followed by a drizzle of honey. Top with pear slices and serve.

Serves 1.
