There is something really rustic and simple about this recipe. The lightly charred bread acts as a great base for this hearty steak sandwich and the lemony hummus is an unexpected dressing drizzled over the top. If you have leftover steak in the refrigerator, it gives this recipe a big head start.

1 2-inch thick slice ciabatta bread
1 6-ounce sirloin steak
3 tablespoons extra virgin olive oil, divided, plus extra for drizzling
Salt, to taste
Freshly ground black pepper
2 tablespoons prepared hummus
Juice from 1/4-1/2 lemon
4 ounces mâche salad greens

1. Preheat grill or grill pan to medium heat. Grill ciabatta until lightly charred, about 2-3 minutes per side. Remove and set aside on serving plate.
2. Brush steak with 1 tablespoon olive oil and season with salt and pepper. Grill until desired doneness, about 8 minutes total for medium rare. Loosely tent with aluminum foil and let rest for 10 minutes.
3. Meanwhile, combine hummus, 1 tablespoon olive oil, lemon juice and season with salt and pepper (consistency should be like sour cream. Add more lemon juice if too thick).
4. In a small mixing bowl, combine salad greens with remaining 1 tablespoon olive oil and season with salt and pepper.
5. Slice steak into 1-inch slices and place over ciabatta. Top with salad greens and lemon hummus dressing. Drizzle with additional oil and serve.

Serves 1.
