QUICK + EASY ENTERTAINING TIPS

lamb burger with lemon yogurt

Garlic, rosemary and mint are all flavors you typically find in lamb recipes and I love using all of them in this recipe. You can use just rosemary or mint with the garlic if you only have one or the other on hand, but combined, all three make for a really flavorful burger. This recipe is great as a burger, or made into mini-burgers, served in a pita.

1/2 pound ground lamb
1 small clove garlic, finely minced
1/4 teaspoon finely minced fresh rosemary
1/4 teaspoon finely minced flat-leaf parsley
1/8 teaspoon finely minced fresh mint
Salt, to taste
Freshly ground black pepper
1-2 tablespoons extra virgin olive oil

Lemon Yogurt
2 tablespoons plain Greek-style yogurt
1 teaspoon fresh lemon juice
Salt, to taste
Freshly ground black pepper

3-4 slices English cucumber, peeled and thinly sliced
Sourdough roll, split

1. Preheat grill or grill pan to medium heat.
2. In a medium bowl, combine ground lamb, garlic, rosemary, parsley, mint, salt and pepper. Do not overmix.
3. Brush both sides of burger with olive oil. Grill for 4-5 minutes per side, until desired doneness.
4. In a small bowl, combine yogurt, lemon juice, salt and pepper. Place lamb burger on bun, top with lemon yogurt and cucumber slices and serve.

Serves 1.
