QUICK + EASY ENTERTAINING TIPS

cornbread | photo by: Cassandra BiroccoThis basic recipe, adapted from The Barefoot Contessa, is more cake-like than most recipes and the extra touch of honey adds just the right amount of subtle sweetness to it. Add cheddar or pepper jack cheese, diced jalapeño or even scallions for a different flavor.

1 1/2 cups flour
1/2 cup yellow cornmeal
2 tablespoons sugar
1 tablespoon baking powder
1 teaspoon salt
1 cup milk
2 eggs, beaten
1 stick unsalted butter, melted and cooled
1 tablespoon plus 1 teaspoon honey
Cooking spray, for greasing

1. In a large bowl, combine flour, cornmeal, sugar, baking powder and salt.
2. In another bowl, combine milk, eggs, butter and honey. Add wet ingredients into dry ingredients until just slightly lumpy. Do not overmix. Allow to sit at room temperature for about 15 minutes.
3. Preheat oven to 350°F. Spray an 6 x 6 baking dish with cooking spray.
4. Pour batter into prepared pan and bake for about 25-30 minutes, or until a toothpick comes out clean. Allow to cool before slicing. Serve at room temperature.

Makes 6 pieces.
