QUICK + EASY ENTERTAINING TIPS

corn muffins

Making muffins for yourself is really much easier than you might think and oftentimes when I do, I’ll make two and have one ready for the following day.

Cooking spray, optional
1/2 cup plus 3 tablespoons flour
1/4 cup plus 1 tablespoon cornmeal
2 tablespoons sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup plus 2 tablespoons low-fat milk
1/2 stick (4 tablespoons) unsalted butter, melted and cooled
2 tablespoons honey
1 egg

1. Preheat oven to 350°F.
2. Line a muffin tin with 2 paper liners or coat with cooking spray.
3. In a medium bowl, combine flour, cornmeal, sugar, baking powder and salt. In another bowl, combine milk, butter, honey and 1/2 egg (discard extra egg or save for later use).
4. Add wet ingredients to bowl of dry ingredients until just combined. Spoon batter into prepared muffin tin and bake for 20-25 minutes, until a toothpick comes out clean (tent with aluminum foil after 15 minutes if getting too browned). Allow to cool slightly before serving.

Makes 2 muffins.
