This is a quick and easy meal to make with leftover roasted chicken or even a store-bought rotisserie chicken. Cucumber and red onion slices add a nice crunchy bite to this sandwich as well.
Greek Yogurt Sauce
2 tablespoons plain Greek-style yogurt
1 tablespoon grated cucumber
1 teaspoon finely grated onion
1 small clove garlic, finely minced
1 teaspoon finely minced fresh dill
Juice from 1/2 lemon
Salt, to taste
Freshly ground black pepper
1/2 cup cooked chicken, shredded at room temperature
In a medium bowl, combine ingredients for sauce. Add more lemon juice to adjust thickness of sauce if necessary. Fill center of pita with chicken and top with sauce.
