QUICK + EASY ENTERTAINING TIPS

These light and flaky biscuits are really easy to make, and made only better but the addition of some really good sharp cheddar cheese. I love to make them for a party and serve them with ham and Dijon mustard for easy make-your-own sandwiches.

Cooking spray, for greasing
2 cups flour, plus more for dusting
1 tablespoon sugar
4 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 stick cold unsalted butter, diced
1 cup grated extra sharp cheddar cheese
2/3 cup milk

1. Preheat oven to 425°F. Coat a baking sheet with cooking spray and set aside.
2. In a large bowl, combine flour, sugar, baking powder, baking soda and salt.
3. Cut in butter until mixture is coarse and crumbly. Stir in cheese.
4. Make a well in center of flour mixture and pour in milk. Stir with a fork just until dough just comes together. Do not overmix. Turn onto a lightly-floured surface and knead gently 10 to 12 times.
5. Form dough into a rectangle about 1/2-inch thick. Cut biscuits into 12 equal squares. Transfer biscuits to a prepared baking sheet and bake until lightly golden brown, 10-12 minutes. Serve warm.

Makes 12 biscuits.
