QUICK + EASY ENTERTAINING TIPS

burger with grilled pineapple | photo by: Cassandra BiroccoSweet grilled pineapple pairs really well with the spicy chipotle mayonnaise in this hearty and flavorful burger.

1/2 pound ground beef
Salt, to taste
Freshly ground black pepper
1/4 red onion, cut into thick slices
1 tablespoon extra virgin olive oil
1 1/4-inch thick slice fresh pineapple

Chipotle Mayonnaise
1 tablespoon mayonnaise
1 tablespoon Greek-style plain yogurt
1 teaspoon chipotle salsa (or chipotle chiles in adobo), or to taste

Toasted sourdough hamburger roll, split

1. Preheat grill or grill pan to medium heat. Form beef into a burger and season both sides with salt and pepper.
2. Brush both sides of onion slices with olive oil and season with salt and pepper. Place onions on grill and cook for 3-4 minutes per side, until nicely charred. Add pineapple and grill for 3-4 minutes per side, until lightly charred. Remove onions and pineapple and set aside to cool.
3. Grill burger for 8-10 minutes on one side. Flip and grill on other side for another 4-5 minutes, until desired doneness.
4. In a small bowl, combine ingredients for chipotle mayonnaise. Season with salt and pepper.
5. Place burger on bottom of roll, followed by pineapple. Top with chipotle mayonnaise and red onion slices and serve.

Serves 1.
