QUICK + EASY ENTERTAINING TIPS

bran muffins

I really love bran muffins and I have to admit, when I make them at home, I like to make mine pretty big and use a large muffin tin. These hearty muffins will fill you up for the better part of a day, but if you prefer to make them in a regular-szied muffin tin, by all means do so.

Cooking spray, for greasing

1/2 cup wheat bran
1/3 cup flour
1/3 cup whole-wheat flour
2 teaspoons wheat germ
3/4 teaspoon baking soda
Pinch of salt
1/2 cup plus 2 tablespoons buttermilk
2 tablespoons unsweetened applesauce
2 tablespoons sugar
1 egg, beaten
1 tablespoon canola oil
1/2 teaspoon vanilla extract
1/4 cup raisins, optional

1. Preheat oven to 350°F. Lightly spray 2 muffin cups of a large muffin tin with cooking spray and set aside.
2. In a medium bowl, combine bran, flours, wheat germ, baking soda and salt.
3. In another medium bowl, whisk buttermilk, applesauce, sugar, 1/2 egg (discard extra egg or save for later use), canola oil and vanilla until frothy, about 5 minutes. Pour into flour mixture and mix until well combined. Stir in raisins (if using).
4. Divide mixture equally into prepared muffin cups. Bake for 20-25 minutes until a toothpick comes out clean from center of muffins. Allow to cool slightly.

Makes 2 muffins.
