QUICK + EASY ENTERTAINING TIPS

antipasti sandwich

This is one of my favorite make-ahead sandwiches. It’s got a good salty bite throughout thanks in part to the salami but also has the soft creamy texture of the goat cheese to balance it out. Tapenade is a thick black olive paste and is generally used as a condiment. It works perfectly as a quick spread on breads and sandwiches and is readily available at most grocery and specialty stores, and works perfectly spread in this sandwich.

2 slices ciabatta bread
2 teaspoons black olive tapenade
2 teaspoons extra virgin olive oil
2 ounces goat cheese
3 slices Black Forest ham, thinly sliced
3 slices Genoa salami, thinly sliced
Salt, to taste
Freshly ground black pepper

Spread each cut side of bread with tapenade, followed by a drizzle of olive oil. On bottom side of bread, add goat cheese, followed by a layer of ham and salami. Season with a pinch of salt and pepper. Serve immediately or refrigerate until ready to serve.

Serves 1.
