stuffed shells

Increase this recipe when you make it so that you’ll have another dinner all ready to go later in the week.

3 jumbo shells
1/3 pound ground beef
Salt, to taste
Freshly ground black pepper
1 tablespoon extra virgin olive oil
1 clove garlic, finely minced
3/4 15-ounce can tomato sauce
3 ounces ricotta cheese
1 tablespoon finely minced fresh basil
1 tablespoon finely minced flat-leaf parsley
1 egg, beaten
1-2 ounces mozzarella cheese, shredded
Parmigiano-Reggiano, freshly grated

1. Preheat oven to 350°F. Bring a pot of water to boil and add salt. Add pasta and cook for 7-10 minutes, until al dente. When pasta is done, drain and set aside.
2. In a medium sauté pan, cook ground beef over medium heat, until browned. Season with salt and pepper. Drain off any excess grease. Add oil to pan and return to heat. Add garlic and cook for 1-2 minutes, until fragrant. Add tomato sauce and simmer mixture for about 5 minutes.
3. Meanwhile, in a mixing bowl, combine ricotta cheese, basil, parsley and 1/2 egg (discard extra egg or save for later use).
4. Pour a thin layer of meat sauce on bottom of a small baking dish, just enough to cover it. Stuff shells, one at a time, with ricotta mixture. Add enough cheese to fill shell but not overstuff. Repeat for all shells, placing in baking pan as you go. Pour remaining meat sauce over shells and top with mozzarella and Parmigiano-Reggiano cheeses. Bake for 20-30 minutes, until bubbly and lightly golden brown.

Serves 1.
