QUICK + EASY ENTERTAINING TIPS

pasta with brisket ragu

The leftover brisket and sauce are completely perfect over a big bowl of egg noodles.

3 ounces egg noodles
1 1/4 cups leftover beef brisket (including vegetables and sauce)
1/2 – 3/4 cup crushed tomatoes
Salt, to taste
Freshly ground black and pepper
1 tablespoon roughly chopped flat-leaf parsley
Freshly grated Parmigiano-Reggiano, for serving

1. Bring a medium saucepan of water to a boil and add salt. Add pasta and cook for 7-10 minutes, until al dente. When pasta is done, drain and set aside.
2. Meanwhile, in a medium saucepan, heat leftover brisket over medium heat. Add crushed tomatoes and season with salt and pepper. Cook until heated through, about 10 minutes. Remove from heat and stir in parsley. Spoon over pasta and top with Parmigiano-Reggiano.

Serves 1.
