grilled steak with cilantro-lime butter

I love this recipe because of the spice rub which gives the steak a really nice crust on one side but it’s also just as good without the rub if you’re a bit more pressed for time. The cool, refreshing cilantro-lime butter melts beautifully over the still warm steak and gives the steak, with or without the rub, a really great flavor.

You can find chipotle chiles in many gourmet markets. The small cans come in two varieties: chipotle chiles in adobo sauce and chipotle salsa. Most of the heat is in the actual chiles in the adobo sauce version so be sure to adjust the amount of chiles you use based on how spicy you want it to be. The salsa version is a totally puréed version, and has a more smoky flavor. Either can be used in this recipe.

1 6-ounce rib-eye steak, thick cut

Spice Rub
1 clove garlic, finely minced
1/2-1 tablespoon chipotle chiles in adobo sauce
1 tablespoon ground cumin
1 tablespoon ground coriander
1 teaspoon ground mustard
1/4 teaspoon chili powder
Salt, to taste
Freshly ground black pepper
Juice from 1 lime
2 tablespoons extra virgin olive oil

Cilantro-Lime Butter
1 tablespoon unsalted butter, at room temperature
1 tablespoon finely minced fresh cilantro
Juice from 1/2 lime, plus extra for drizzling
Salt, to taste
Freshly ground black pepper

1. Preheat grill or grill pan to medium-high heat.
2. In a medium bowl, combine ingredients for spice rub and brush over top of one side of steak. Allow to rest at room temperature for 5-10 minutes.
3. Place steak on grill, spice-rub side down, and cook for 5-7 minutes. Turn and cook until desired doneness, another 5-7 minutes. Transfer steak to a plate and tent with aluminum foil for about 5-10 minutes.
4. Meanwhile, combine ingredients for cilantro butter in a small bowl.
5. Place a pat of cilantro-lime butter over steak and drizzle with additional lime juice and serve.

Serves 1.
