QUICK + EASY ENTERTAINING TIPS

grilled rib-eye steak

Nothing says summer to me more than firing up the grill and when I crave a good steak, it’s usually in the form of a rib-eye. It’s a great cut of meat to grill and it’s full of flavor. For a nice, cooling condiment to serve with it, make this roasted jalapeño crema.

Spice Rub
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper

1 6-ounce rib-eye steak, thick cut
2 teaspoons chipotle salsa
1 lime, cut in half

1. In a small bowl, combine ingredients for spice rub. Rub on one side of rib-eye and allow to rest at room temperature for 5-10 minutes.
2. Meanwhile, preheat grill or grill pan to medium-high heat.
3. Place steak on grill, spice-rub side down, and cook for 5-7 minutes. Turn steak and baste spice side with chipotle salsa. Cook, flipping once more, until desired doneness. Remove steak and allow to rest for 10 minutes before slicing.
4. At the same time, place lime, cut sides down on grill and cook for about 5 minutes, until grill marks form. Turn and cook for another 1-2 minutes.
5. Drizzle steak with juice from grilled limes and serve.

Serves 1.
