QUICK + EASY ENTERTAINING TIPS

This recipe serves more than one but because it freezes really well, I included the full recipe. Transfer leftovers into individual containers and freeze for up to one month.

1 tablespoon unsalted butter
1/2 large Spanish onion, diced
1 green pepper, diced
Salt, to taste
Freshly ground black pepper

1 1/2 pounds ground beef
1 tablespoon cumin
1 29-ounce can tomato sauce
1/2 tablespoon red pepper flakes
1/4 tablespoon cayenne powder
1/2 tablespoon chili powder
1 15-ounce can pinto beans

1. In a stock pot, melt butter over medium heat. Add onion and pepper and cook for about 10 minutes or until vegetables are softened. Season with salt and pepper.
2. Add ground beef and stir in cumin. When beef is cooked through, drain off excess grease from pan and add tomato sauce. Stir again and allow it to simmer for about 15 minutes.
3. Add crushed red pepper, cayenne and chili powders and combine well. Let simmer on low heat for about 2 hours. Add pinto beans and stir again. Be sure to add beans last so they don’t get too mushy. Adjust seasonings if necessary. Let simmer for another 30 minutes, until beans are well incorporated and heated through. Serve warm.

Makes 1 batch.
