This recipe takes an already delicious brisket recipe and makes it even better.
2 tablespoons extra virgin olive oil, divided
1/4 medium onion, thinly sliced
Salt, to taste
Freshly ground black and pepper
2 tablespoons prepared barbeque sauce
4 thin slices beef brisket
2 ounces freshly grated sharp cheddar cheese
1 flour tortilla, cut in half
1/2 cup prepared cole slaw, for serving
1. In a medium sauté pan, heat 1 tablespoon olive oil over medium heat. Add onion and cook until lightly golden brown and slightly caramelized, about 5-7 minutes. Season with salt and pepper. Add barbeque sauce and cook for another 1-2 minutes. Add brisket and cook until heated through, about 2 minutes.
2. Preheat grill or grill pan to medium heat. Brush outsides of tortilla with oil. Flip over tortilla halves and place half of cheese on inside of one half of tortilla. Place brisket slices over cheese, followed by onion mixture. Top with remaining cheese and gently press halves together to make a sandwich. Grill for 3-4 minutes, turn and grill for another 2-3 minutes, until cheese is melted and tortilla is lightly charred on both sides. Cut into wedges and serve with cole slaw.
