QUICK + EASY ENTERTAINING TIPS

prosciutto + brie sandwich

Melted cheese, salty prosciutto and peppery arugula all pair perfectly in this super quick sandwich.

2 ounces brie cheese
1 4-inch piece French baguette, cut horizontally in half
2 teaspoons apricot marmalade, jam or preserves
2 slices prosciutto, thinly sliced
Salt, to taste
Freshly ground black pepper
Baby arugula, for serving

Preheat broiler. Place bread slices on a baking sheet and place brie equally over both slices. Broil until cheese just starts to melt and bread is lightly toasted. Top with apricot marmalade, followed by prosciutto slices. Season with salt and pepper. Top with arugula and serve.

Serves 1.
