pina colada sushi

This “mock” sushi has all the flavors of the popular drink, minus the rum. Be sure to add the salt as it really helps to bring out the flavors.

1/2 cup sushi rice
1/2 cup plus 2 tablespoons water
1/4 cup plus 2 tablespoons unsweetened coconut milk
1/4 cup plus 2 tablespoons pineapple juice
2 teaspoons agave nectar
Pinch of salt
Toasted shredded coconut, for garnish

1. Place rice in a strainer and rinse under cold water until water runs clear, about 3-5 minutes. Allow rice to dry in strainer for 10 minutes.
2. Place rice, water, 1/4 cup unsweetened coconut milk and 1/4 cup pineapple juice in a saucepan and cook, covered, over medium-high heat for about 5 minutes. Stir; reduce heat to low and cook until rice is tender, 7-10 minutes. Check halfway and stir if starting to stick to bottom of pan. Remove from heat and stir in remaining coconut milk and pineapple juice. Add agave nectar and salt and let stand, covered for 10 minutes. Transfer to refrigerator and allow to cool for at least 2 hours.
3. Pour toasted coconut onto a plate and set aside. Form sushi into 1-inch balls. Using wet hands, gently form balls into oval shapes, resembling sushi. Roll each piece in coconut, covering entirely and place on a serving platter. Press down slightly to flatten and continue with remaining sushi and serve.

Makes 8 pieces.
