QUICK + EASY ENTERTAINING TIPS

jamaican jerk skewers

I love anything that has jerk seasoning on it and steak and chicken are two great ways to enjoy the flavors of it. Allow the meat to marinate for at least 4 hours so that it really adsorbs all of those great spices and flavors.

1-2 sirloin strips steaks, cut into approximately 1 1/2-inch cubes (12 cubes)

Marinade
1/2 small habanero chili, seeded and finely minced
2 teaspoons finely minced fresh thyme
1/4 onion, finely minced
1 garlic clove, finely minced
1 1/2 tablespoons low-sodium soy sauce
1 1/2 tablespoons light brown sugar
1/4 teaspoon allspice
1/4 teaspoon coriander
1/4 teaspoon cinnamon
Pinch ground cloves
Salt, to taste
Freshly ground black pepper
1 1/2 tablespoons canola oil

Chipotle Mayonnaise
1/4 cup mayonnaise
Juice of 1/4 orange
Zest of 1/2 orange
1 1/4 teaspoons chipotle chiles in adobo sauce

4 wooden skewers, for serving
1/4 pineapple, cut into approximately 1 1/2-inch cubes (8 cubes)
Cooking spray, for greasing

1. In a medium bowl, combine ingredients for marinade. Add steak and toss to evenly coat. Cover with plastic wrap and allow to marinate in refrigerator for at least 4 hours.
2. Soak skewers for about 10 minutes.
3. In a small bowl, combine ingredients for chipotle mayonnaise. Season with salt and pepper. Refrigerate until ready to serve.
4. Preheat grill or grill pan to medium heat. Coat with cooking spray.
5. Remove one cube of meat from marinade and thread onto one skewer. Add a piece of pineapple, and continue until you have 3 alternating pieces of meat and 2 pieces of pineapple. Repeat with remaining skewers.
6. Place skewers on grill and cook for 7-10 minutes, turning every few minutes to cook on all sides. Transfer to a serving platter and serve with chipotle mayonnaise for dipping.

Serves 2.
