honeydew + ginger sushi

honeydew ginger sushi | photo by: Cassandra BiroccoThe easiest way to cut crystallized ginger is to cut it into super thin strips, one piece at a time. Keep the strips together if you can; turn and cut again in the other direction. Continue until finely minced.

The size of these sushi rectangles are the exact width of the honeydew melon (once it’s trimmed) so a thin slice fits perfectly over each rectangle. For more bite-sized appetizers, make sushi and honeydew into smaller 1-inch bit sized squares.

Ginger Simple Syrup
1/2 cup granulated sugar
1/2 cup cold water
1/3 cup fresh ginger, peeled and roughly chopped

1/2 cup sushi rice
1 cup water
2-3 tablespoons ginger simple syrup
Pinch of salt

Honeydew melon, for serving
Crystallized ginger, finely minced, for serving

1. Make ginger simple syrup. In a small saucepan, add sugar, water and ginger and bring to a boil. Stir until sugar dissolves. Cover and allow to steep for 10-15 minutes. Cool then strain. Refrigerate until ready to use.
2. Place rice in a strainer and rinse under cold water until water runs clear, about 3-5 minutes. Allow rice to dry in strainer for 10 minutes.
3. Place rice and water in a saucepan and cook, covered, over high heat for about 5 minutes. Reduce heat to low and cook until rice is tender, 10-12 minutes. Remove from heat; let stand, covered for 10 minutes. Transfer to a bowl and stir in ginger simple syrup and salt. Transfer to refrigerator and allow to cool for at least 2 hours.
4. Using an ice cream scoop or spoon, scoop out sushi into 6 equal balls. Using wet hands, gently form each ball into a rectangle and place on a serving tray. Continue with remaining sushi.
5. Half melon and cut a small slice of bottom of one half so it lays flat on counter. Using a sharp knife, carefully slice honeydew melon into thin slices, going from one cut side of melon to other. Trim off round pieces so shape of melon matches shape of sushi. Place melon slice on sushi, following by a small amount of crystallized ginger down center of roll. Repeat with remaining sushi and serve immediately.

Makes 6 pieces.
