QUICK + EASY ENTERTAINING TIPS

grilled lamb skewers

A quick and really delicious appetizer that’s perfect for entertaining.

Wooden skewers, cut in half, for serving
1-1 1/2 pounds boneless lamb of leg, butterflied and cut into 1-inch strips

1 teaspoon red wine vinegar
1 clove garlic, finely minced
Juice from 1/4 lemon
Salt, to taste
Freshly ground black pepper
1 tablespoon finely chopped fresh mint
1 tablespoon finely chopped fresh parsley
1 tablespoon extra virgin olive oil

Lemon-Mint Yogurt Sauce
6 ounces plain Greek-style yogurt
Zest and juice from 1/2 lemon
1 clove garlic, finely minced
1 tablespoon finely minced fresh mint

1. Soak skewers in water for 10 minutes.
2. In a medium bowl, combine ingredients for marinade and set aside.
3. Place one piece of lamb between 2 sheets of parchment paper. Using a mallet, or rolling pin, gently pound lamb until 1/4-inch thick. Transfer to a plate and repeat with remaining pieces of lamb. Skewer each piece of lamb and place lamb in a glass or ceramic baking dish. Pour marinade over lamb. Allow to marinate in the refrigerator for up to 4 hours.
4. In a food processor, combine yogurt, lemon zest and juice, garlic and mint and process until smooth. Season with salt and pepper. Refrigerate until ready to serve.
5. Preheat grill or grill pan to medium-high heat.
6. Remove lamb skewers from marinate and place on grill. Cook skewers for 2-3 minutes per side, until desired doneness. Transfer to a plate and allow to rest for 5 minutes. Serve with lemon-mint yogurt sauce.

Serves 2-3.
