QUICK + EASY ENTERTAINING TIPS

deviled eggs with curry mayonnaise

Unpeeled eggs can last in the refrigerator for up to a week. Make a few extra eggs and keep them on hand for a quick snack later in the week.

1 egg
1 tablespoon mayonnaise
1/4 teaspoon curry powder
Salt, to taste
Freshly ground black pepper

1. Fill a saucepan with cold water and place on stove. Add egg, making sure there is enough water to cover egg by 1 inch. Bring egg to a boil; remove from heat. Cover and let stand for 12 minutes. Drain and rinse with cold water. Let stand for 5 minutes, then peel off shell.
2. Cut egg in half lengthwise and remove yolks. Add yolks to a small bowl along with mayonnaise and curry powder and mix until smooth. Season with salt and pepper. Place filling inside cavity of egg and refrigerate for about 1 hour to allow flavors to develop. Season with salt and pepper and serve.

Serves 1.
