QUICK + EASY ENTERTAINING TIPS

crostini with lemon ricotta and herbs

This is an easy summer appetizer that really takes advantage of great, fresh herbs. It’s nice when you use the combination of all three but one on its own would be just as delicious.

2 1/2-inch thick slices French baguette, sliced on a diagonal
2 ounces whole milk ricotta cheese
Juice from 1/2 lemon
1 tablespoon finely chopped fresh herbs (thyme, parsley and basil)
Salt, to taste
Freshly ground black pepper
1 tablespoon extra virgin olive oil

1. Preheat oven to 425°F. Place bread slices on a baking sheet and bake until just golden brown, about 3-4 minutes. Turn slices over, and bake for another 1-2 minutes. Set aside.
2. In a small bowl, combine ricotta and lemon juice. Spread each slice with ricotta cheese. Top each with fresh herbs and season with salt and pepper. Drizzle with oil and serve immediately.

Serves 1.
